Wine-mezcal from the South of Jalisco, 100% agave distillate produced in the vicinity of the Nieve and Fuego volcanoes, the latter the most active in Mexico.
The distillate from this volcanic region is known as tuxca, from Tuxcacuesco, since Jalisco is not part of the MEZCAL Designation of Origin. It has been produced since the 16th century after the prohibition of coconut or tuba wine that competed with Castilian wine, becoming the first agave distillate on the American continent.
Insecto is made with the most rustic method of agave distillation, with artisanal and ancestral techniques such as cooking in underground earth ovens, grinding with a mallet and axe, fermentation in volcanic wells (tajipos), and a Filipino distiller.
